I'm proud to report that Preston has finally developed some good eating habits.
Yesterday he ate scrambled eggs (hidden in a breakfast quesadilla), he'll eat veggies as long as he can dip them in ranch (takes about a tablespoon of ranch for 1 cucumber slice) and today he's decided he likes nectarines and apples, as long as he can hold them and eat them whole, not in slices.
I've found that if I take a picture of him eating the food and then show it to him he'll mimic the action and eat more. Needless to say I now have a lot of pictures on my phone of him eating.
